Ingredients

Cocktail

1 ½ oz white rum

1 oz Dole Pineapple Juice

½ oz lime juice

½ oz vanilla syrup

2 tbsp Dole Chef-Ready Cuts Diced Dragon Fruit, thawed

4-6 oz sparkling water or lemon-lime soda

Ice

¼ oz Color Burst Syrup (optional, for added color effect)

1 Dole IQF Lemon Wedge, for garnish

Color Burst Syrup

1 cup Dole Chef-Ready Cuts Diced Dragon Fruit

1 cup simple syrup

Directions

Color Burst Syrup

  1. Blend dragon fruit and simple syrup until smooth.
  2. Strain to remove solids.
  3. Refrigerate up to 5 days.

Cocktail Build

  1. Fill a tall glass or Collins with ice.
  2. Add rum, pineapple juice, lime,and vanilla syrup.
  3. Add Dole Chef-Ready Cuts Diced Dragon Fruit and let some cubes float near the top.
  4. Top with sparkling water or lemon-lime soda. Gently lift once with a bar spoon to create a "cascade" effect.
  5. Garnish with Dole IQF Lemon Wedge. For extra visual impact, slowly drizzle Color Burst Syrup over the top before serving.
